The art of science of viticulture were bred into the region since Roman times, awaiting the day when the use of cork as a stopper was rediscovered by visiting Spanish monks and the Benedictine monk Dom Perignon's blending skills, creating a sparkling white wine of consistently high quality from red grapes. Champagne's international claim to fame lies not only in its long history. Its unique orchestration of Pinot Noir and Chardonnay grapes, growing at the perfect height and latitude, produce the wine which, under the stewardship of some of the world's most experienced wine-makers, becomes a delight to not only the palate, but to each of the five senses in turn with its bouquet, colour, sparkle and flavour.
